Cut Down on Holiday Calories by Shari Stone

Hey there!

How many of you are dreading the holidays?  You're thinking of the weight you'll gain, right?  Experts say that we gain around 7 lbs. during the holidays.  All the cookies, cakes, candy and home made meals really pack on the pounds.  As you may know, I'm on the Profile Plan by Sanford and I was looking for recipes that could help me cut down those holiday calories, but still have good flavor and makes me feel like I'm still enjoying the holidays feasts.

I was talking to my coach, Sherrine and I told her how much I miss potatoes.  We all know that potatoes are full of carbs, but this time of year they bring so much comfort to us...ah...mashed potatoes, cheesy potatoes, roasted potatoes...I could go on and on...see...I MISS them.  Well, Ms. Sherrine said, 'Shari, have you ever tried making radishes like your potatoes?  They have the same consistency and texture of a potato.  Why not try that when you're making a roast or bake them and mash them together for a baked potato?"  I scuffed at her comment.  I can NOT stand radishes.  YUCK!  Tastes like dirt ...has no flavor... and some of them are super spicy, but I thought...what do I have to lose?

On Sunday, my husband Dave made a roast in the crock pot and I threw in some carrots and onions and then I thought...hey...let's throw in these radishes.  Let me tell you something...OMG...I LOVE RADISHES!  :)  Seriously, they soaked up that roast juice, I sprinkled the roast and veggies with a Lipton Onion Soup packet and the radishes soaked up that flavor.  Took them out and put my butter on it (I'm allowed fats...don't worry) and it tasted just like a stinkin' potato.  I was shocked and VERY excited!  Even our 11 yr old, Samantha liked them!  

So, for Thanksgiving this year, I'm bringing boiled radishes (going to boil them in chicken stock) for my potatoes.  Then I'm bringing my Cauliflower Stuffing (click for recipe) and crust-less pumpkin pie (Click for recipe) that only has 44 calories per slice...WOW!  Looks like I'll be enjoying the holidays after all.  It's all about rethinking your meal plan and eating in moderation!
