TODAY is National Prime Rib Day!Prepare for a drooling mouth and growling belly because today is the perfect excuse to indulge in one of America’s favorite hunks of meat. Prime rib is that delicious cut of beef usually roasted and served as the main course. Adding a drizzle of au jus with a side of baked potato completes the taste your palate’s looking for.
Real prime rib is graded USDA Prime. Other grades of meat in the United States are Choice, Select, Cutter, and Canner. The best type of meat to use for prime rib is Prime, but Choice meat will work as well. Wanna cook your own? Begin by removing the extra fat from the bottom of the roast.
Combine ½-cup chopped fresh parsley
½-cup fresh rosemary
½-cup fresh tarragon
¼-cup fresh thyme, and salt and pepper in a bowl.
Add ¼-cup of olive oil.
Coat the meat with the herb mixture and then cook at 325-degrees for about 2-1/2 hours (or until the internal temperature reaches 120 degrees).
Allow the prime rib to rest for 10 minutes before serving.
